Creamy Italian Sausage Potato Soup: A Cozy Crowd-Pleasing Recipe

Indulging in comfort food on chilly cozy nights is a pleasure like no other. If there was a definition for a comfort dish on these nights, it’s this Creamy Italian Sausage Potato Soup – a recipe perfected over months to bring you the epitome of easy, fast, and delightful cooking. 

It has one of my favorite things as an ingredient, you will never guess. Wine, but not just any wine, Prosecco! We always have Prosecco in the fridge. So, I decided to cook with it one day and wow it was amazing!

You know I am a sucker for easy set and forget recipes. This one is exactly that and it’ll taste like you spent hours over the stove.

We actually made this for our friends who just had their baby. It was the easiest meal to drop on their front porch. They raved about how well the leftovers reheated and how delicious the bread was to dip in the soup!

You won’t believe where the creaminess comes from?

Creaminess takes center stage in this recipe. We smashed up a scoop of the poataoes once they cooked some. Then added it back into the soup. It really thickened the broth up nicely and gave it this faux creamy texture that is amazing!

Time to Cook:

Ingredients:

  • Italian Sausage
  • Potatoes
  • Onion
  • Garlic
  • Italian Seasoning
  • Salt
  • Pepper
  • Prosecco
  • Heavy cream
  • Tomatoes
  • Spinach
  • Flour (optional)

How to make:

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onions and garlic until fragrant (2-3 minutes).
  3. Add Italian Ground Sausage to the pot and brown.
  4. Add chopped potatoes and flour(optional) and cook for 5 minutes.
  5. Pour Prosecco to deglaze the pot (2-3 minutes).
  6. Add chicken and beef stock and halved cherry tomatoes
  7. Salt, Pepper and Italian Seasoning to taste.
  8. Simmer for 25 minutes, stirring occasionally.
  9. Remove a cup of potatoes and smash in a small bowl, mix with cream, and add back to the pot.
  10. Add spinach and cook for an additional 2-3 minutes.
  11. Stir well and serve into bowls.

Ingredients

  • 1 lb. Ground Italian Sausage

  • 6 med Potatoes

  • Half an Onion

  • 1 tbsp minced garlic

  • Salt

  • Pepper

  • Italian Seasoning

  • Prosecco (any dryer white wine will work)

  • 1oz Heavy Cream

  • 15 Cherry Tomatoes

  • Handful Fresh Spinach

  • 1 tbsp Flour

Directions

  • Heat olive oil in a pot over medium heat.
  • Sauté onions and garlic until fragrant (2-3 minutes).
  • Add Italian Ground Sausage to the pot and brown.
  • Add chopped potatoes and flour(optional) and cook for 5 minutes.
