Easy Sausage Potato Veggie Bake Recipe: A Quick and Meal for Busy Days

This Healthy and 5 Ingredient Easy Sausage Potato Veggie Bake tastes amazing!

I feel like it should be no surprise that the majority of our recipes are easy and beginner friendly. Our recipes will make sure you aren’t standing over a stove for hours. Don’t get me wrong, I love cooking! But, I’m a set it and forget it kinda gal. 

I am also a mom now and really have to be fast with making meals and everything else that comes with being a busy mom. Do you ever feel the juggling pressure of everyday life and not wanting to spend hours cooking a healthy homemade meal?

Growing up my Grams made sure she taught me how to cook for myself. And, never be too proud to ever do anything for yourself. They were big on that motto and also always be willing to learn something new.

Making our own meals allows us to control what exactly goes into them. I mean when you eat out they overload meals with butter and salt. Both of those things are so tasty but not healthy when overused.

Unpopular opinion: we love cooking at home more than going out!!!

I actually named this one Genevieve’s Sausage Potato Veggie Bake. My best friend made this for Brent and I once before and we loved it. She works full time for NASA, has two little ones, a husband and a house to run. A busy woman who loves to make healthy options for her family is my kinda gal forever. She gave me permission to share this recipe with you! 

I hope you enjoy this recipe as much as we do! It is in our regular meal rotation every other week!

Ingredients:

  • Italian Sausage
  • Bell Pepper
  • Onion
  • Olive Oil
  • Potatoes
  • Salt
  • Pepper
  • Italian Seasoning

How to make:

  1. Get out a big mixing bowl. 
  2. Cut up your uncooked sausage into medallions with kitchen scissors. 
  3. Slice your veggies. I suggest slicing the bell peppers into long thick strips, slice your onion into rounds and then cut in half and lastly, slice your potatoes into 1/2″ slices and dice into 4 sections.
  4. Add your sausage and veggies to the bowl and drizzle olive oil over everything.
  5. Add Salt, Pepper and Italian seasonings to taste. 
  6. Toss until all pieces are evenly coated. 
  7. Pour onto a baking sheet or rectangle baking dish. 
  8. Bake at 450′ for 45 minutes to an hour, or until all sausage is completely cooked through. 
  9. Take out of the oven and let rest for a few minutes.
  10. Drizzle with a little more olive oil and top with some italian seasoning for garnish.
  11. Serve in bowls

Ingredients

  • 1lb. Italian Sausage

  • 3 med. Russet Potatoes

  • 1 Onion (red or yellow)

  • 3 Bell peppers

  • Salt & Pepper (to taste)

  • 1 tbsp. Olive Oil

  • Italian Seasoning (to taste)

Directions

  • Get out a big mixing bowl.
